Culinary Infidelity
Hey what’s going on, I know they say cheaters never win but they can at least still eat good right. I love gnocchi and have always had great success on my menus with them. Little known secret…my last 3 chef jobs that I had to do tastings for all had some form of gnocchi in one of the dishes.
It requires skill, feel and technique and if you aren’t careful they could end up as little lead weights in your guests stomach. Maybe you have tried making them in the past and found that after cooking the potatoes and rolling the dough they either fell apart or sunk to the bottom of the pot like the Titanic.
Well have no fear because instant potatoes are here….they aren’t just for nursing homes anymore. I love to make them from scratch but I have included the traditional method and the cheaters method for you to try. I have added a little ricotta to the cheaters method to help out with texture and flavor but you will be pleasantly surprised. Don’t worry it will be our “dirty little secret” Try it and let me know what you think.
